FAQS

I. Product Information & Selection

Chef’s Knife: Versatile; ideal for meat, vegetables, herbs.

Santoku: Japanese-style; lightweight and multi-purpose.

Cleaver: For bones and hard ingredients.

Paring/Utility Knife: Precision tasks (peeling, coring).

Knife Set: Handle various cutting and chopping tasks.

Consider usage (home/professional kitchen) and hand size when selecting handle design (Western/Japanese).

Primarily high-carbon steel (e.g., VG-10, 10Cr15CoMoV, AUS-10), Damascus steel (multi-layer forged), or specialty alloy steel. Some products use nitrogen treatment for rust resistance.

Common handle materials: G-10 resin, Carbon fiber, solid wood, Micarta, composite resin, etc., balancing grip, and durability.

When choosing a whetstone, consider your knife's steel type and condition.

Start with a lower grit (200-800) for dull blades, medium grit (1000-3000) for regular sharpening, and higher grit (4000-8000) for polishing.

Softer stones are easier for beginners; harder stones last longer but require more skill. Avoid cheap stones because they wear down quickly and cut unevenly.

Look at the Pattern

Genuine Damascus steel has a layered, wavy or flowing pattern that runs through the steel, not just on the surface. It’s formed by folding different steels together—not laser-etched or printed.

Check the Cross-Section

If possible, examine the spine or bolster area. Real Damascus often shows pattern continuity at the spine, indicating the steel is layered throughout.

Look for Acid Etching Clues

True Damascus is often acid-etched to highlight the pattern, but if the pattern fades or peels with use, it’s likely fake.

Check the knife spine with a magnifying glass

Some acid-etched Damascus chef's knives reveal their layered structure in the blade when viewed under magnification at the spine. If it's a san-mai (clad steel) blade, the core layer becomes distinctly visible.

II. Usage & Maintenance

Minor rust: Gently polish with baking soda paste or rust remover.

Prevention:

  • Clean and dry after each use;
  • Apply food-grade mineral oil periodically (especially carbon steel knives);
  • Avoid prolonged contact with acidic foods (e.g., citrus).

Wood handles: Oil with food-safe mineral oil to prevent cracking.

Synthetic handles: Avoid soaking or sun exposure to prevent warping.

Honing Rod: Use before/after each use (15°–20° angle).

Whetstone: Progress from coarse to fine grit (maintain consistent angle).

Avoid pull-out knife sharpeners—they may damage steel.

Strongly discouraged!

High heat, detergents, and collisions accelerate corrosion/blade damage.

Proper care: Hand wash, dry immediately, and store ventilated.

Factory-sharpened and ready to use. Maintain edges regularly with a honing rod (3–5 gentle strokes per side). Professional sharpening recommended every 1–3 months.
